We caught up with the APOSTLE team to learn more about them and how this epic collab came to be.

1. Tell us a bit about the backstory of who you are, how the brand came to be, the name inspiration.
We always made really tasty sauces and ferments at home, so when we moved to the Kāpiti Coast from Wellington City, to get to know our neighbours we started making and selling our sauces at the local monthly market. As for the name and artwork, we share a strong love of Roman Catholic iconography and stained glass so thought it a great source of inspiration.

2. What did the early days of the brand look like and how has it inspired where you are today?
It was super difficult at the start as we launched Christmas 2019, right before Covid, so chaos for us is kind of the norm! We spent hours working late into the evening, 7 days a week for four years until things started to calm down and we were able to make it work properly. The biggest thing we learned was to be patient and that the extra effort really does pay off in the long term.

3. What makes your product different?
We have such a focus on quality and flavour that nothing else can get in the way of making the best possible condiments. For our Chilli Crisp in particular, we spent a year working on it, refining 19 different ingredients taking inspiration from Sichuan chilli oil, Indian Tadkas and Japanese Taberu Rayu until we were finally happy with it. We're actually always trying to improve, even now, as nothing is perfect!

4. What's your favourite product from your range and the best thing to have it with?
For us we're always working on fun, exciting new things, but a classic is a classic for a reason, so our Kimchi Ketchup with a side of Spud Fries, for sure!

5. Is there anything you think people would be surprised to learn about your brand?
Probably that Mat was working at BurgerFuel in Wellington, secretly using the team and customers who wanted to try them as guinea pigs for the range that ended up launching everything! He gave away so many samples with burgers and fries to customers, and his boss actually bought some of the first bottles we ever made. We're also a super small team and even now make everything by hand!

6. How did the partnership with BurgerFuel come to be, and why did it feel like a good fit?
The BurgerFuel team were kind enough to seek us out at an event and followed up with some great ideas as to how to use our chilli oil. Potato skins are super crispy and delicious, so the perfect accompaniment, and it feels very full circle to be working with them, especially for Mat.

7. What would be a dream product or burger you'd want to make with BurgerFuel next?Korean-style fried chicken bites in a sticky gochujang / APOSTLE Kimchi Ketchup sauce sounds pretty good to us!

8. What's your go-to BurgerFuel order?Combustion Tofu adding an egg (we're so glad it's back!) with a side of Kumara fries and Lemon Aioli is a dream combo, and we'll supply the hot sauce for the spuds.
